Republic to closer to home here in America, we offer or handcrafted
versions
of a wide array of flavors. Whether it be malty German-style Bock
beers,
nutty,roasty English-style ales, crisp Bohemian lagers, spicy
Belgian-style
wonders,or floral American I.P.A.s we can and will make it all! For the
fortunate few, one might get lucky enough to try a snifter (or two!) of
our
award winning wood barrel-aged beers. Any way you pour it, your choices

Great Beer is developed, bad beer happens all by
itself Welcome to the world of Prairie Rock Beer.
From the gentle hiss of carbon dioxide bubbles to
the smooth feel of a well crafted ale sliding down
your throat, beer stimulates all the senses. We will
focus on the four senses, sight, smell, taste & feel.

The Color
A beer's color is determined largely by the amount
and type of malt used. The term malt is shorthand
for "malted barley". A malted grain is
simply one germinated or sprouted before being dried
under controlled conditions. After drying, the malt
is sometimes kilned or roasted to varying degrees
to produce malts of different colors. By mixing a
variety of malts, brewers can produce beers from
a pale straw color to opaque black. The addition
of other grains, such as wheat, rice, or corn, can
lighten a beers color.
The Smell
A beer's smell is the result of the interplay between
hops, malt and in some cases, yeast. Hops are the
green flower of a creeping vine called Humulus lupulus.
They are shaped like pine cones and are about the
size of your thumb. The oils in the hop cone contribute
a bouquet that may be light and floral or sharp and
pungent, depending on the amount and type of hops
used and when they are added during the brew.

Bios:
Jim Wolfer
Starting out a home brewer in San Diego, Jim always
had a passion for microbrewed beer. After finding
his calling, attended Siebel Institute of technology
to study the craft of micro brewing. After graduating
Siebel, he secured a job as microbrewer at one of
the Midwest premier brewing companies and continued
to grow and learn his craft of fine micro brewed beer.
In 1998 he joined the Prairie Rock Brewing Company
family and literally assisted in building the Brewery
at the restaurant in Schaumburg. Since 1998, he continued
to create the best micro brewed beer around and contributed
to winning national and industry awards. In April
2004 Jim was promoted to brew master for Elgin and
Schaumburg and continues to bring Prairie Rock guest
some of he finest beer in America.
